Nelly, it can be tricky at first but gets easier with experience. There are different methods and you need to some research to decide which type is best for you.
You can add in things such as lemon & orange peel, but I'd suggest using dried ones. Plus the lye tends to turn most botanicals brown. Not sure about olives - never tried it, only olive oil!
I'd suggest going to Miller's Homemade Soap Page in the first instance. There is a wealth of info and recipes on there. Brilliant for beginners.
After that, try going The Soap Dish Forum (Powered by Invision Power Board) and signing up there, there is a tonne of fantastic info and experienced soapmakers there!
