CHICKEN CHILI
- 3# Cooked chicken breast – Cut into bite sized pieces ¼ cup Vegetable Oil
4 cups Water
½ cup Diced Onions
1 or 2 Green Peppers – Diced
5 Tomatillos – Diced (Green Mexican Tomatoes)
2 tsp. Cilantro - Minced
2 Jalapenos – Diced
3 Cloves Finely Chopped Garlic
8 tsp. Chicken Base
3 tsp. Cumin
2.5 tsp. Chili Powder
4 tsp. Paprika
4 tsp. Basil
1.5 tsp. Crushed Red Pepper
½ tsp. Oregano
2 tsp. Sugar
3+ tsp. Corn Starch (Add as needed to thicken)
2 tsp. Lime Juice
4 oz can Diced Green Chilies
2-15oz cans Great Northern Beans - Drained
1-15oz can Kidney Beans – Drained[/list:u]
Sauté onions and Jalapenos with garlic in oil till tender.
Combine all in crock-pot and cook for at least 2 hours.
